HOW TO MAKE COOKIES

1 ½ cups of all purpose flour
1 tsp baking powder
½ tsp baking soda
1 ½ cups oats
¼ tsp cloves
½ tsp nutmeg
1 tsp cinnamon
2 tbl cocoa
½ cup butter
1 cup sugar
1 egg
One can of apple pie filling, cut into small pieces
¾ cup raisins
¾ cup chopped walnuts
OATMEAL SUPREME COOKIES -- INSTRUCTIONS
Mix together the first eight ingredients in a mixing bowl and set aside.
Mix butter and sugar in another bowl with an electric mixer.
Add egg and beat well.
Add dry mix to wet mixture and blend well.
Add apples, raisins, and walnuts and mix well with wooden spoon.
Drop spoonfuls onto greased cookie sheet.
Bake at 375 degrees for 12 to 15 minutes.
TIPS
Instead of apple pie filling, you can use apples to make cookies:
Peel, slice, and core two to three apples.
Chop apples into smaller pieces.
Place apples in a pan.
Add ½ cup of water.

1 bag (12 oz.) semi-sweet chocolate chips
1 cup chopped walnuts or pecans
CHOCOLATE CHIP COOKIES -- INSTRUCTIONS
Combine flour, baking soda, and salt in a bowl and set aside.
Mix butter and shortening together in a separate bowl.
Add brown sugar and sugar and beat until fluffy.
Add eggs and vanilla extract and beat well.
Add dry mix to wet mixture and blend well.
Stir in chocolate chips and chopped nuts.
Drop spoonfuls onto greased cookie sheet.
Bake at 375 degrees for 8 to 10 minutes.

TIPS
Other flavored semi-sweet chips such as peanut butter or butterscotch can be used instead of or with the chocolate chips to make cookies.
PEANUT BUTTER COOKIES -- INGREDIENTS
1 ¼ cups all purpose flour
¾ tsp baking soda
¼ tsp salt
½ cup butter
½ cup peanut butter
½ cup sugar
½ cup brown sugar
1 egg
½ tsp vanilla extract

Combine flour, baking soda, and salt in a bowl and set aside.
In another bowl, beat butter with an electric mixer.
Add peanut butter, sugar, and brown sugar and beat until fluffy.
Add egg and vanilla extract and mix well.
Add dry mix to wet mixture and mix until well combined.
Roll dough into small balls.
Roll cookie balls in sugar.
Place cookie balls on greased cookie sheet.
Using a fork, press down on cookies to flatten and make criss-cross pattern.

TIPS

SNICKERDOODLES -- INGREDIENTS
3 ¾ cups all purpose flour
½ tsp baking soda
½ tsp cream of tartar
½ tsp salt
1 cup butter
2 cups sugar
2 eggs
¼ cup milk
1 tsp vanilla extract
3 tbl sugar
1 tsp cinnamon
SNICKERDOODLES -- INSTRUCTIONS
Combine flour, baking soda, cream of tartar, and salt in a bowl and set aside.
Beat butter and 2 cups sugar with an electric mixer in a separate bowl.
Add eggs, milk, and vanilla extract and beat well.
Add dry mix to wet mixture and combine well.
Roll dough into small balls.
In separate small bowl, combine 3 tbl of sugar and cinnamon.
Roll cookie balls in sugar mixture.
Place cookie balls on greased cookie sheet.
Using a fork, press down on cookies to flatten and make criss-cross pattern.
Bake at 375 degrees for 8 to 10 minutes.
Remove and allow to cool.
STAINED GLASS COOKIES -- INGREDIENTS
1 bag (12 oz.) semi-sweet chocolate chips
1 stick margarine
1 cup chopped walnuts
1 pkg. (10 ½ oz.) colored mini marshmallows
Wax paper
Foil
STAINED GLASS COOKIES -- INSTRUCTIONS
Melt the margarine in a large pan on medium heat on the stove.
Add the chocolate chips to the melted butter in the pan, turn heat down to low. Melt and stir constantly.
Add chopped walnuts and mix well.
When melted, remove pan from stove.
Add marshmallows. Stir until just combined but not too much where marshmallows are melted.
Marshmallows should be as whole as possible with only minimal melting.
Place sections of wax paper on table.
Spoon mixture in the form of a log on the waxed paper sections.
Bring the sides of the wax paper up and then roll down together.
Fold in the sides of the wax paper.
Roll in a piece of foil and set aside.
Repeat with rest of mixture and then place in freezer to set.
TIPS
White mini marshmallows can be used instead of colored marshmallows to make cookies. The colored marshmallows give the cookie that stained-glass look.
When you are ready to eat, take a cookie log out of the freezer, remove the foil, and let it sit out for a short period of time. This will make it easier to cut. Then peel off the wax paper, being careful to remove all the wax paper. Cut the log into slices and refrigerate any leftovers, if any!
GINGERBREAD COOKIES -- INGREDIENTS
¼ cup boiling water
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
½ cup baking molasses
3 cups all purpose flour
½ cup butter
½ tsp salt
¼ tsp ground cloves
1 egg
½ cup brown sugar

GINGERBREAD COOKIES -- INSTRUCTIONS
Boil water in a large pan on the stove.
Melt butter in the boiling water.
Add all the other ingredients to the butter water.
Mix well.
Place the dough in another container and chill in the refrigerator for 2 hours.
Remove dough from the refrigerator, roll out on cutting board or table, and cut into shapes.
Place cookies on a greased cookie sheet.
Bake at 350 degrees for 8 to 10 minutes.
Remove and allow to cool.
TIPS
If you are in a hurry, the dough can be chilled in the freezer for one hour.
Raisins, chopped walnuts, or sunflower kernels can also be added to the mixture.
Cookies can be decorated with icing after they are cool.

1 tsp baking powder
¼ tsp ginger
3 ½ cups all purpose flour
1 cup butter
1 ½ cups sugar
1 egg
1 9 oz. can of crushed pineapple -- do not discard the juice

Combine baking soda, ginger, and flour in a mixing bowl.
In a separate bowl, mix the butter and sugar together.
Add one egg and mix well.
Add the pineapple and juice and mix.

Bake 400 degrees for 10 to 12 minutes.
Remove and allow to cool.

½ tsp baking soda
